If you use the Nordwest-Fork it should be possible. But I think it is much cheaper to let someone simply rework the original wheels for Super-Moto.

yes....
New rims and new spokes.
Front 3,5" and rear 4,5" wide
Both in 17" diameter
These are the dimensions of the Nordwest/cape... if I remember right
So you can mount spotry road tires in 120/60 or 120/70 in front and 160/60 at the rear.

Just look in one of your local motorcycle-magazines. There should be ads of peolple that offer this kind of service.
I am not sure if you can mount 120 front wheels - better measure it out.

On a local shop?
Look out for someone who is working on Enduros or SuperMotos.
Both often have broken or damaged wheels and need some kind of service.
Choppers sometimes are also a good source.
Everyone who has to d owith spoke wheels should give you some adresses.
I don't know if you have to care about road legality or things like this :)

But be aware of the prices for alu rims and stainless spokes
